♥ Fattoush ♥

HOORAY for post #1!!!  Cheers to my newest culinary stepping stone. 

My plan for this blog is to share with you all of my healthy recipes, thoughts about possible future recipes, food alternatives, etc. I base my recipes on cancer fighting power foods and all over healthy, fresh ingredients that benefit you in all kinds of yummy ways.

I cook at home for myself, my wonderful boyfriend, friends, family, and of course my puppy gets to enjoy all of the left overs. I am a culinary school graduate, classically french trained, young lady who found a love for cooking light when my mama was unfortunately diagnosed with cancer. 'Tis why I started looking into "cancer defense" recipes and ingredients. 

Recipe number one goes to the yummy fattoush that I tossed together for lunch today… my boyfriend described the dish as "screaming with flavor". This dish was so easy, so quick, so filling, and sooooo freshening. The original recipe calls for chickpeas with mint/ parsley rather than my kidney beans and cilantro but this is what we personally had around so thankfully it worked out! Enjoy.

Serves 4 : 
INGREDIENTS 
  • 1 pita 
  • 12 cherry tomatoes halved 
  • ½ red bell pepper 
  • ½ yellow bell pepper 
  • 4 mini cucumbers 
  • ¼ red onion 
  • 2 scallions 
  • 1 can kidney beans (drained &rinsed) 
  • ¼ cup chopped cilantro 
  • 3 tablespoons red wine vinegar 
  • 2 tablespoons lime juice
  • 2 tablespoons extra virgin olive oil 
  • salt and pepper to taste 
DIRECTIONS 
  1. Preheat oven to 375 degrees farenheit , put pita on baking sheet and toast until crisp, about 10 minutes. Cool and then pull into small pieces. 
  2. In a bowl combine all other ingredients once chopped and toss. Add pita last and toss one last time time coat with salads juices.
